Allow dry-rubbed shoulder to rest at room temperature. 9 pm: place the pork butt directly on the grill grate, position a foil-lined baking sheet or aluminum pan underneath. Smoke at 185f overnight. Start Smoking the Pork on the Traeger. Remove the pork from the refrigerator, add any additional rub that may have come off, and once the Traeger is up to 225°F, place the pork butt on the grate with the fat side DOWN and the thickest part facing to the hotter RIGHT side.Cooking The Brined Shoulder. After 8 - 24 hours have passed, your brining process is nearing its end time. You’re ready to slow cook this at 225°F on your smoker, or 350°F in your oven.
